    2 large eggs
    4 tbsp. melted butter
    2 tbsp. sugar
    1/4 tsp. salt
    1 tsp. vanilla extract
    2 cups flour
    2 tbsp. baking powder
    2 tsp. baking soda
    1 3/4 cup lowfat buttermilk


Begin preheating waffle iron.
In large mixing bowl, beat eggs. Add sugar, salt, vanilla, and butter. Mix well. Add flour, baking powder, and baking soda, but do not mix yet. Using a wire whisk, stir buttermilk into mixture and stir well. Batter will be slightly lumpy.

Spray hot waffle iron with cooking spray. Pour batter into waffle iron and cook to desired crispness.
