Ingredients

    1 drained can of solid white Tuna, 170g
    (drained 120g, packed in water)
    1 hardboiled egg (I used an Omega 3 egg)
    1 tbsp mayo
    1 tbsp miracle whip light
    1 oz. fresh lemon juice
    1 stalk celery
    2 tbsp red onion
    3 cornichons, or pickle relish
    slices of tomato
    1 oz old cheddar, shredded or slice (or your preference...swiss cheese has less fat, but this is what I had) 2 slices bavarian multigrain bread, or preferred

Directions

Drain tuna, add egg and chop together. Dice cornichons, onion and celery and add to tuna, along with mayo.
(I used a combo of mayo and M.W. light, though I don't usually light lite or fat free anything...)
Fresh squeeze of lemon juice brightens up the flavour. Salt and pepper to taste.
I toasted the bread while heating up the tuna in the microwave. I put half the mixture on each slice, and sprinkled on paprika and a leeeetle cayenne. Sliced tomato on top, and then half of the cheese. I use old cheddar so the taste is bold though the amount is small!
I broiled them for just a couple of minutes.
One was more than enough, and I paired it with a baked sweet potato that I could not finish.
