    1 lb. ground beef, extra lean
    1/4 medium onion, chopped
    1 can green chilis
    1 cup cheddar cheese, shredded
    9 flour tortillas
    5 oz. Velveeta cheese
    1/2 cup canned evaporated milk
    1/4 cup diced pimentos


Brown beef, onion, and green chilis. Drain grease off meat. Stir in shredded cheese. Roll meat into tortillas. Place enchiladas in 9x13 casserole dish. Melt Velveeta, pimentos, and canned milk together. Pour over the top of the enchiladas. Cover with foil and bake for 20 minutes at 350.
