Introduction

If you like Coconut you will love these. My secret ingredient is marinating the chicken in Coco Lopez Creme of Coconut for 24 hours the night before and they came it wonderful. Best chicken I have ever made. The calorie count may be a little off as you are only marinating the strips and then tossing the marinate out. Ingredients

    8 boneless, skinless, chicken tenderloins
    1 cup coconut
    3/4 cup flour
    1/2 tsp salt
    1/4 tsp garlic powder
    1 can Coco Loco creme of coconut


Directions

Thaw chicken and marinate in Creme of Coconut, preferably overnight.

Mix together coconut, flour, salt and galic powder in dish.

Remove chciken strips from marinate and shake off excess, discard marinate. Coat strips with coconut mixture.

Place on baking sheet, sprayed lightly with cooking spray.

Bake at 400 for 20 - 25 minutes or until brown and cooked through.
