This family favorite is a definent comfort food... but extremely healthy! This family favorite is a definent comfort food... but extremely healthy!
Number of Servings: 8


    4 chicken breast, skin and bone removed
    1 sleeve Reduced Fat Ritz Crackers
    3 Tbsp of McCormick chicken rub OR Salad Toppings Crunchy & Flavorful OR your favorite dry spices


1) Preheat oven to 375F.
2)Cut each chicken breast in half length ways. Each half will be 1 serving size.
3) Combine crackers and spices in a large zip lock bag. Push out as much air as possible. Crunch together crackers and spices until their consistency is medium to fine.
4) Place chicken into bag and toss until coated well with dry mixture.
5) Spray a casserole dish lightly with PAM, and place chicken inside, slightly touching. Sprinkle any leftover dry mixture onto the tops of the chicken.
6) Bake for 40 minutes or until done.

**This meal is paired nicely with steamed green vegetables. Enjoy!!**
