    2 bunches spinach
    16 oz. ricotta cheese
    2 egg yolks
    2 tbs parmesan cheese


Blanch spinach and wring out in clean dish cloth. Chop spinach. Place spinach in large bowl, mix in ricotta, egg yolks, and parmesan cheese.
Add enough flour to make managable. Form into table spoon size balls and place in a lightly greased 9x12 pan.
Top with a thin slice of butter and sprinkle with parmesan cheese.
Bake on 350 for 20 minutes then broil for 5 minutes to brown.
