    1 log of polenta - I like Green Chile & Cilantro Polenta but you can use any kind
    8 tbsp of Trader Joe's Corn and Chile Tomato-Less Salsa
    2 cups red kidney beans
    4 tbsp grated parmesan cheese


Cut the polenta into 1/2 inch slices and grill, either on a nonstick surface or using fat-free cooking spray. Top the polenta slices with the kidney beans and salsa, then sprinkle the cheese on top. Can be served as lunch or as a side dish for dinner.

Makes 4 servings.
