Introduction

Ingredients

    1.25 pounds (20 oz) ground turkey 93% lean
    1 egg
    2 slices soft whole wheat bread, crumbled
    5.5 oz (one small can) V-8 Juice Low Sodium
    1/4 cup 2% milk or skim milk
    1/2 medium onion, chopped
    1/2 tsp ground sage
    1/2 tsp dried thyme leaves
    1/2 tsp dry mustard
    1 tsp salt
    1 tsp black pepper

Directions

Mix wet ingredients (egg through milk), then stir in onions and spices. Add ground turkey and mix well, using hands. Coat a 12-serving muffin pan with cooking spray. Divide the meat mixture into the 12 muffin cups. Cook at 375 degrees for 30 minutes or until browned and cooked through. Note: juices may overflow from muffin tins; place a foil-covered baking sheet under pan to catch drippings.
