    1 9 oz box of frozen chopped spinach, squeezed dry
    1/2 cup onions, chopped
    2 garlic cloves, pressed
    1/4 cup red bell pepper, chopped
    6 kalamata olives, finely chopped
    1.5 teaspoons of olive oil
    6 sheets phyllo dough
    dash of red pepper flakes
    3 ounces, chicken breast cooked and shredded
    6 Tablespoons of feta cheese
    1/4 tsp of salt
    Pam cooking spray
    For brushing phyllo
    1 tsp of olive oil
    1 TB of butter melted


Preheat oven to 375

Thaw spinach in pouch in cold water. I snip a small corner out of package and squeeze all the water I can out of the pouch, then I put the spinach in a paper towel and remove the excess

Saute onions and garlic in olive oil until softened. Add red bell pepper, spinach. olives, feta, chicken, salt, red pepper flakes and oregano. Warm through.

Use two sheets folded in half for each turnover. Follow instructions on package to prevent dough from drying out. Cover dough with plastic wrap and a damp towel, work with one sheet at a time.

Spray one sheet with Pam, fold spray again. Repeat. Alternate Pam with butter/olive oil quickly. Mound 1/3 cup of filling on phyllo and fold diagonally.

Repeat with remaining 6 sheets and filling. Bake at 375 for 20 minutes or until golden brown.

Makes 4 servings, 1 turnover each.
