delicious mediterranean pasta - ready in 15 mins delicious mediterranean pasta - ready in 15 mins
Number of Servings: 4


    Zucchini, 500 grams
    Eggplant, fresh, 250 grams
    Tomatoes, red, ripe, raw, year round average, 2 cup cherry tomatoes
    Garlic - as much as you like
    Basil, 15 leaves
    Olive Oil, 2 tbsp
    Pasta, Barilla Cellentani, 8 oz
    Salt, Pepper


dice the vegetables, and heat a pan - add olive oil when hot - add garlic and wait until slightly brown - add eggplant dice first and let simmer for two minutes or so, then add zucchini, lastly tomatoes - add spices and herbs (i like basil, salt and pepper, but any italian or provence herb mixes will work)
cook pasta until al dente
if you wish, add a little bit of grated parmesan cheese
