    1 tbsp Coconut Oil
    1/2 cup chopped onions
    1 tbsp Garlic Powder
    1 tspn Cumin Powder
    1 tspn Chili Powder
    1/2 tspn Salt
    1 tspn Fennel Seeds
    1/2 cup frozen peas
    8 oz Frozen Spinach
    1 cup mixed bell peppers
    1 cup Whole Wheat Couscous (dry)
    1 cup Vegetable Stock


Makes 4 - about 1 cup servings

Saute onions in coconut oil. Add garlic powder and sea salt to taste.

Add peppers, spinach, peas and continue to saute until onions are brown.

Add dry couscous and cook until slightly brown.

Add 1 cup water to mix with 1tsp vegetable stock mix.

Bring to boil.

Once boil, reduce to low heat and simmer until water is absorbed. Keep covered.

Once all the water is absorbed, turn off from heat and let it stand for 10-15 mins.
