    1/4 cup onions, chopped
    2 tablespoons margarine
    2 tablespoons flour
    pinch each nutmeg and garlic powder
    1/2 tsp paprika
    1/2 tsp salt
    1/4 tsp pepper
    2 1/2 cups 2% milk
    3 cups thinly sliced potatoes (with or without skin)
    2 tbsp grated parmesan cheese


In a nonstick pot, sautee onions in margarine on medium heat until golden. Stir in flour and spices and cook for 1 minute. Add milk and bring up to a simmer. It will thicken. Remove from heat. In a greased casserole dish, place a thin layer of sauce on the bottom then layer potatoes with sauce until both are finished. Top with cheese and cover with foil. Bake at 350F for about an hour or until potatoes are tender. Remove foil and broil until the top is brown and bubbly.
