1 can tomato sauce (15 oz)
    2 Tbsp flour
    1 Tbsp canola oil
    1 white onion (med)
    9 Corn Tortillas
1 Cup Shredded Mexican Reduced Fat Cheese
    1 lb. lean ground turkey
    1 cup black beans
    1 cup corn
    3 Tsp Taco Seasoning Mix
    1 Tsp Garlic Powder
    2 Tbsp Chili Powder
    1 Tbsp Ground Cumin

Preheat oven to 400 degrees. Use a 2 Qt Saucepan and place on med/hi heat. Add oil and flour. Combine until smooth. Add tomato sauce, chili powder, garlic powder, and cumin. Whisk until smooth. Bring to a boil. Sauce will thicken. Add water until desired thickness. Meanwhile, brown turkey in a skillet. Add taco seasoning, black beans, and corn. Mix well until combined. In an 8 Qt casserole dish, place a spoon of sauce and spread evenly. Add a layer of tortillas. Add half of ground meat mixture. Dip tortillas in sauce before adding another layer. Add the rest of the meat mixture. Dip remaining tortillas and cover with remaining sauce. Sprinkle the top with the cheese and olives evenly. Place in oven for about 20 minutes or until sides are bubbling. Cool for five minutes before serving. Serve with a dallop of sour cream. Makes 9 servings (2 in by 2 in).
