Ingredients

    1 pound cooked chicken breast, shredded into small pieces
    1 large onion, diced
    4 cloves garlic, minced
    1 can (7 ounces) chopped green chiles
    .5 cup fresh cilantro, chopped fine
    4 cups chicken broth
    1 tbsp olive oil
    3-4 cans Great Northern Beans (drained and rinsed)
    1 tbsp. cumin
    1 tbsp. chili powder
    1 tsp. cayenne powder
    *1 cup Monterey Jack cheese
    *1 cup Pepper Jack cheese

Directions

Pour olive oil into large sauce pan. Add onion and garlic. Saute until opaque. Add chicken, chiles, and cilantro. Mix well. Cook until warm and flavors absorbed into chicken.

Add Chicken broth and beans. Season with chili powder, cumin, and cayenne powder. Salt and pepper to taste. Let simmer for 45 minutes -1 hour until flavors are combined. *Serve with cheeses and extra cilantro.
