Ingredients

    1 lb ground turkey breast
    1 can fat free spicy refried beans
    2c salsa
    1 chopped poblano pepper
    1/2 c low fat cheddar cheese (or pepper jack)
    2-3 chopped scallions
    8 whole wheat tortillas

Directions

brown the turkey with a little hot sauce. add the beans, salsa, chopped poblano and scallions. turn off the heat and stir in the cheese until it melts a little. scoop into 8 whole wheat tortillas (soften them in the microwave for a few minutes). put into a greased baking dish and bake for 20-25 mins at 350.
