A twist on the usual peanut noodles A twist on the usual peanut noodles
Number of Servings: 4


    2 cloves garlic
    2 tbsp rice vinegar
    2 tbsp low sodium soy sauce
    1/4 cup smooth peanut butter
    1/4 tsp crushed red pepper
    1 tbsp ginger root
    2 tsp sesame oil
    1 tbsp brown sugar
    16 oz (2 packages) tofu shiritake noodles, drained and rinsed
    1 tbsp toasted sesame seed (optiona)
    3 scallions, thinly sliced (optional)


Combine garlic, vinegar, soy sauce, peanut butter, red pepper, ginger, sesame oil, and brown sugar in a food processor or blender. Whirl until well blended and smooth. Add water by tablespoons until you reach the desired consistancy. In a medium bowl, combine noodles and sauce. Add scallions and sesame seed (if desired). Toss to coat.

Makes 4 servings.
