Introduction
This is a twist off of Ani Phyo's Pineapple Icebox Dessert I used Banana instead as I love bananas. If you are a banana lover you will definitely love this treat. Ingredients

Crust:
2C Raw Cashews
1Tbs Non-Alcoholic Vanilla Extract or Seeds from 1 Vanilla Bean
2Tbs of Raw Agave
Filling:
1 1/2c of Raw Cashews
1/3c of Raw Agave
1/4c Coconut Oil
1/4c Filtered Water
1 Med. Banana
2 Med. Chopped Bananas
Directions
Place all Crust ingredients in a Food Processor and chop to a crushed wafer texture. Sprinkle half of the crust onto the bottom of a loaf pan.
Filling:
Blend Cashews, Coconut Oil, Agave, 1 banana to a smooth consistency add water as needed to get a creamy consistency.
Spoon the mixture in a bowl and add the 2 chopped bananas and stir to mix well. Spoon the filling into the prepared loaf pan and sprinkle the remaining crust on top.
Pat Lightly, freeze for 2-3 hours or until chilled. I left it over night.
Will keep for 4-6 days in the fridge and several weeks in the freezer.

This recipe is awesome! Super simple to put together. It is healthy for you but at the same time is decadent. Made it to bring to a dinner party and everyone loved it. When I told them it was part of my Raw Food Diet and it was 100% Raw they were speechless. - 1/24/11
