Ingredients

    1 T. Extra Virgin Olive Oil
    1 Medium Onion, chopped
    2 T. Minced Garlic
    1 Lg. Celery Stock
    2 C. Rough Cut Mushrooms
    4 C. Chopped Kale (1 sm. bunch)
    1 Lg. Can Chick Peas
    2 Lg. Potatoes, cut into bit sized peices
    6 C. Water
    1.5 T. Beef Stock Bouillabaisse

Directions

Heat oil in large stock pot. Add onion, garlic, celery. cook until fragrant. Add Mushrooms, kale and chickpeas. Stir, Add water and Beef Stock, stir. Simmer 15 minutes or until Hot through. For softer Kale cover and simmer 30-45 minutes.


For less sodium use Fat free, low sodium Beef Broth.


Makes approx. 6 - 2C servings.
