    4 (3/4 inch thick) pork chops
    1/2 cup dijon mustard
    1/2 cup italian bread crumbs
    1 teaspoon salt
    1 teaspoon pepper
    1/2 teaspoon cayenne pepper


Preheat oven to broil

Thickly coast pork chops with Dijon mustard. In a shallow bowl, combine bread crumbs and seasonings. Coat pork chops in crumbs.

Arrage pork chops on Wire rack, set on top of
sheet pan. (cover pan with alumnium foil to reduce mess)

Place in broiler and cook borth sides until coating is brown, about 5 minutes on each side.

  • The flavor was good. I tried to sub yellow mustard because somehow we were out of Dijon. I didn't use even a quarter of a cup and it was a strong flavor. Will try again with Dijon as the breading flavor was good. - 2/5/13

  • I agree with the one word YUMMMMMM-O!!! This was just like having fried prok chops EXCEPT better!!!! I am going to try chicken next time because I LOVE fried chicken and I miss not being able to have it that much. Thanks so much for this wonderful recipe. - 4/9/09

  • Anyone else think the calories are off for this? a plain chop is 460 calories! I'm gluten-free so I substituted potato chips for bread crumbs as I didn't have any GF crumbs on hand. My husband wasn't joyous about it but did OK making it again and he is PICKY - 2/3/08

  • Very good and VERY easy! No exotic ingredients, either, so good on the spur of the moment. My pork chops were almost 1" thick, so I increased the time to 7 minutes per side, and that worked fine. Feared the mustard might be over-powering: It wasn't. Really good, thanks! - 11/25/07

  • 1 word...YUMM-O! These were quick and too easy to make. I didn't have cayane peeper so I used chili powder and added 1/2 tsp of honey on each chop, ummm umm. Also, if you don't have a wire rack, like myself, just know you'll loose the batter on the other side when you filp the chopps. - 10/22/07
