This is easy warm and hearty. Great for supper too. This is easy warm and hearty. Great for supper too.
Number of Servings: 5


    1 cup diced peeled potatoes
    1/2 cup chopped bell peppers (any color)
    1/2 cup chopped onion
    1 tsp canola oil
    1 cup fully cooked ham
    8 eggs
    1/3 cup sour cream
    1/4 cup milk
    1/2 tsp. onion salt
    1/4 garlic salt
    1/4 tsp. pepper
    1 cup shredded cheddar cheese, divided


*Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer for 10-15 min. or until tender. Drain.

*In a large skillet, saute half of the peppers and onion in oil until tender. Add half of the ham and potatoes; saute 1-3 minutes longer.

*Meanwhile, in a blender, combine the eggs, sour cream, milk, onion salt, garlic salt and pepper. Cover and process until smooth. Pour half over vegetable mixture; cook and stir over medium heat until eggs are completely set. Sprinkle with 1/2 cup of the cheese. Repeat with remaining ingredients. Makes 5 servings.
