    1 T dry yeast
    1 c warm wate
    2.5-3 c spelt flour
    2 T olive oil
    1 t salt
    olive oil for hte bowl


dissolve yeast in a large bowl in the warm water. Add 1.5 cups flour and mix well w/a large spoon. add oil, salt and the restof the flour and work into a mnageable dough. turn ont a ell-floured surface and knead for 5 minutes, adding more flour as the dough gets sticky. Wash out he same bowl and greas with olive oil. put th dough back into the bowl and turn once to cover with oil. cover with a clean kitched towel, and let rise for 1 hour. once the dough has doubled in size, punch it down and divide int 2 pieces. On a flat work area, roll the dough briefly for 1 minute and set aside to relax in a bowl or on a sheet pan for 15 minutes.

Preheat oven to 475 degrees F and sprinkle a cookie sheet or pizza pan with cornmeal to keep the pizza from sticking. take the dough and spread into pans,flattening with your hands. brush with olive oil and top! Makes 2 pizzas. Recipe is calculated for 8 slices per pizza.
