Ingredients

3 Tbs olive oil
2 cups (1/2") diced rustic whole wheat bread, remove crust
3lbs (1/2") diced, seeded roma tomatoes
3 cloves minced garlic
2 Tbs sugar
2 tsp kosher salt
1 tsp freshly ground black pepper
1/2 cup lightly packed julienned fresh basil leaves
1 cup grated Parmesan cheese
Directions
Preheat oven to 350
Heat olive oil over medium high heat and then add bread cubes. Stir to coat and cook until evenly browned, about 5 minutes.
Combine tomatoes, garlic, sugar, salt and pepper in a large bowl. Add tomato mixture to bread, stir and cook for another 5 minutes.
Off the heat and stir in the basil.
Pour into a shallow 6 to 8 cup baking dish. Sprinkle with cheese. 35 to 40 minutes or until top browned and tomato mixture bubbling. Serve hot or warm.
