    4 large Eggs
    1.5 tbsp Onions, chopped
    1 tbsp Scallions, chopped
    1 small Mushroom, chopped
    1/4 Tomato, chopped
    1 oz Cabot 75% Light Vermont Cheddar, sliced
    1.5 tbsp Smart Balance Light Buttery Spread


Prep: chop onions, scallions, mushrooms and tomatoes; cut thin cheese into thin slices for easy melting.
Add the spread to a warm frying pan and heat until melted.
Saute vegetables until the onions are clear then add the eggs.
Cook until desired firmness then add the sliced cheese and cover until melted.
