    2 cups whole wheat flour
    3 Tbsp sucanat
    1 1/2 tsp baking powder
    1 tsp ground cinnamon
    1/4 tsp salt
    1/3 cup Earth Balance
    1/2 cup egg substitute
    3/4 cup dried cranberries
    3 Tbsp oats


Makes 8 scones

Preheat oven to 400 degrees. In a large bowl, combine flour, sweetener, baking powder, cinnamon, baking powder, and salt. Cut in earth balance until mixture resembles coarse crumbs. Make a well in the center of flour mixture. In a. Small bowl, combine egg and buttermilk; stir in until just moistened (some of the dough may look dry).

Turn out onto floured surface. Knead by folding and gently pressing dough for 10 to 12 strokes or until nearly smooth. Pat or lightly roll dough into an 8-inch circle. Lightly brush with additional buttermilk. Sprinkle with oats, pressing lightly into dough. Cut dough into 8 wedges. Place the wedges 1 inch apart on a parchment lined baking sheet. Bake for 15 minutes or until edges are lightly brown. Serve warm.
