    3 large baking potatoes
    3/4 cup fat free half and half
    4 tsp butter spread (I used Olivio spread)
    1 tsp salt
    1/2 tsp pepper
    2 Tbsp paprika


Scrub potatoes; prick in a few places with a fork. Bake at 450 for about 45 minutes, or until tender. Cut the potatoes in half (lengthwise); scoop out pulp. Reserve the potato shells; set aside. Mash potato pulp, beating in enough half and half to make fluffy. Season with butter, salt and pepper. Stuff reserved potato shells with mixture, rounding the tops. Sprinkle with paprika. Bake potatoes for about 15 minutes, or until nicely browned.

**You can also put mixed potato mixture in a casserole dish to bake. If you do, add a few extra minutes of baking time.
