This is a lighter recipe and really delicious. I used non fat yogurt instead of apple sauce. This is a lighter recipe and really delicious. I used non fat yogurt instead of apple sauce.
Number of Servings: 60


    1 cup mashed bananas (the recipe calls for 2 I use 3)
    ¾ cup sugar
    ⅓ cup unsweetened apple sauce (I used vanilla yogurt)
    3 tbsp canola oil
    1 egg
    ¾ cup all purpose flour
    ¾ cup whole wheat flour
    ½ cup oats (calls for quick cooking, I just used old fashioned)
    1 ½ tsp baking powder
    ½ tsp baking soda
    ¼ cup finely chopped walnuts (I probably use ½ cup)
    1 tsp grated lemon peel
    It also called for ⅓ cup chopped dates, I don’t like them so I didn’t use them.


1. In large bowl, beat bananas, sugar, applesauce, oil and egg until well blended. Combine flours, oats, baking powder, baking soda; gradually beat into banana mixture until blended. Stir in walnuts and lemon peel.
2. Coat miniature muffin cups with cooking spray or paper liners (first time I just made large muffins and cooked them longer). Fill half full of batter and cook at 350 for 12 - 14 minutes or until toothpick comes out clean.
