Directions

~Chop onions, peppers, carrots, garlic
~Remove corn from freezer, allow to thaw slightly
~Remove sausage meat from casing, discard casing
~Brown sausage meat over medium heat in heavy bottomed stock pot in 1 tsp of olive oil
~Remove meat and drain on paper towel
~Add other tsp olive oil and sautee onions, peppers, carrots for 5-6 min until tender.
~Add chopped garlic and frozen corn, season with garlic powder, cumin, chili powder, cayenne.
~Melt in dark chocolate
~Deglaze pot with 1/2 bottle of beer
~Add tomatoes, stock, beans. Re-introduce sausage meat, 2 bay leaves
~Bring to a boil. Reduce heat and simmer for 45-minutes-hour.
