    * Egg, fresh, 4 large
    * Spinach, fresh, 1 cup
    * Mushrooms, fresh, 0.5 cup, pieces or slices
    * Mozzarella Cheese, part skim milk, 4 oz
    * *Kraft 2% Sharp Cheddar Cheese, 2 oz


Add eggs to bowl and beat. Chop spinach and mushrooms into smaller pieces add to egg. Add mozzarella cheese to egg, spinach and mushroom mixture and stir until mixed. Pour mixture into a greased pie dish. (I use olive oil spray.) Sprinkle sharp cheddar cheese over top of mixture and bake for 30 minutes at 350 degrees. It is best to let this cool for about 10 minutes before serving since it will rise during cooking. You may need to stir in 1 more egg or 2 egg whites to completely cover the spinach, mushrooms and cheese before pouring into pie dish.
