    2 c skim milk, 2 cups low fat shredded cheddar, 2 tbsp canola oil, 2 tbsp flour, 8 oz of whole grain penne pasta, 1/2 c of fat free cheese


cook pasta as instruced. preheat oven to 350. in saucepan, add oil and flour, whisking at med/high heat for 2 mins. whisk in the milk, bring to a boil. boil 1 min, remove from heat and add 2 c of cheese, stir until cheese is melted. Stir in cooked pasta (drain and rinse first). Put in 2 qt baking dish, top with remaining 1/2 of cheese, bake 25 min. Makes 6, ~1 cup servings.
