Ingredients

    1.50 cup (not packed) Cottage Cheese, 2% Milkfat
    6 large Egg, fresh, whole, raw
    1 tbsp Olive Oil
    1 cup, chopped Onions, raw
    4 cup OreIda Peppers & Onion Hash Browns
    16 oz Jimmy Dean Sauage - Country Mild (by _STEPHANIE_)
    3.5 cup, shredded Cheddar Cheese

Directions

Saute onion, then add sausage and cook until done. Add rest of ingredients and mix well. If making the casserole to bake immediately, thaw the hash browns. If cooking the next morning, using the hash browns frozen is fine. Pour mixture into a 13x9 casserole dish sprayed with cooking spray. Bake uncovered at 350 degrees for 35-40 minutes if baking as soon as you put it together. If baking from the refrigerator, bake about an hour or until bubbly and slightly brown. Don't overbake!
