    1 lb bacon, cooked and crumbled
    1 cup chopped onion sauteed in 1 tablespoon oil
    1 1/2 cups small curd cottage cheese, 2%
    2 cups shredded cheddar cheese
    1 1/4 cups shredded swiss cheese
    6 eggs, lightly beaten
    4 cups frozen shredded hash browns


Cook bacon and onion separately and combine. Add rest of ingredients and mix well. If making the casserole to bake immediately, thaw the hash browns. If cooking the next morning, using the hash browns frozen is fine. Pour mixture into a 13x9 casserole dish sprayed with cooking spray. Bake uncovered at 350 degrees for 35-40 minutes if baking as soon as you put it together. If baking from the refrigerator bake about an hour or until bubbly and slightly brown. Don't overbake!
