This is prepared with chick peas of three varieties - the regular, green and dark garbanzos. Delicious as a side dish. This is prepared with chick peas of three varieties - the regular, green and dark garbanzos. Delicious as a side dish.

    *Organic Garbanzo Beans, Trader Joe's, 1.5 cup, rinse well to rid of the salt.
    Chickpeas dry ( garbanzo beans), .25 cup soak, sprout if desired, cook. same with the green chick peas. (I did not use green since I was out of all which is why I used extra canned chick peas)
    *Peppers, sweet, red, fresh, 3 tbsp., chopped
    Green Peppers (bell peppers), 3 tbsp., chopped
    Celery, raw, 3 tbsp., chopped
    Onions, raw, 3 tbsp chopped fine
    Maple Syrup, 1 tbsp
    *Balsamic Vinegar of Modena Trader Joe's, white 1 tbsp
    Food & Wine Magazine's jalapeno pepper mustard, 1 tsp.
    Fresh Chives, 1 tbsp chopped
    Garlic powder, .5 tsp
    Pepper, black, 1 dash


Zap the uncooked soaked chick peas in the microwave oven for 3 minutes or drop in hot boiling water for minutes till soft and cooked. Sprouted chick peas cook quicker that those that are just soaked in water and also are healhier. Add all the vegetables to the cooled chick peas.

Mix all the rest of the ingredients to make a dressing. Pour over the chickpea- vegetables mixture. Serve as a side dish.

Variations: For Indians, use samosa sweet chutney and green chutney as dressing. Sprinkle with hot mix and serve as an appetizer.
