Ingredients

    8 oz salmon
    1 c fat free mayo
    1/4 cup grated parmesan cheese
    1 tsp cayene pepper
    1/2 oz. lemon juice
    extra virgin olive oil spray

Directions

Mix mayonnaise, parmesan cheese, and cayene pepper in a small bowl. Lightly spray baking sheet with EVOO. Place fish on the baking sheet skin side down. Spread the mayo mixture so that it completely covers the top of the fish. Bake 20 minutes at 400 degrees, or until fish flakes easily with a fork.
