    1 onion, cut into squares
    1/2 lb lamb stew meat
    3 stalks celery, cut into 1/2 inch pieces
    4 medium carrots, cut into 1/2 inch pieces
    10 mushrooms, halved
    4 T fresh thyme
    3/4 cup water

    1 T unsalted butter
    2 T whole wheat flour
    1 egg yolk
    2 t lemon juice

    1/3 cup chopped fresh parsley (or 1 T dried)


Place lamb, vegetables, and herbs in slow cooker with about 3/4 cups water. Cook on low about 5 hours.

One hour before serving:

In saucepan, melt butter. Stir in flour, and then slowly stir in about 1 cup broth poured out of the slow cooker. Cook until thickened. Beat egg yolk slightly with lemon juice. Slowly stir some of the hot flour sauce into the yolks, then add to the rest of the sauce. Add to the lamb with parsley. Cook another 1 hour.

Serve over white rice.
