    1/4 cup egg substitute
    1 dash sea salt
    1 dash freshly ground black pepper
    1 cup firmly packed spinach leaves
    1 oz slice or shredded 2% reduced fat cheddar cheese
    1 light multigrain english muffin, toasted


Spray medium nonstick skillet with nonstick cooking spray. Heat over medium-high heat. Add salt & pepper to egg substitute. Set aside.

Saute spinach in skillet for 1-2 minutes until wilted. Add egg substitute to pan and stir to cook evenly, approximately 3 minutes.

Turn off heat and add cheese to egg & spinach mixture.

Using a spatula, scoop eggs, spinach & cheese onto english muffin half. Top with other half english muffin.
