    lb Barilla Plus elbow macaroni
    c. light mayonnaise
    1/4 cup roasted red peppers, drained and finely chopped
    2 TBS chopped basil leaves
    Juice of half fresh lemon
    2 TBS onion powder
    1 c. diced celery
    c chopped, pitted ripe olives
    Salt & pepper to taste


Cook macaroni in a large pot of boiling, salted water for 7-8 min. Rinse and drain.

In a large serving bowl, mix mayo, roasted red peppers, basil, lemon juice and onion powder.

Add macaroni and toss with mixture in bowl to coat.

Add celery and olives mixing gently.

Season with salt & pepper.

Cover & refrigerate at least 1 hour before serving. Serves 6
