Ingredients

3 cups quick cooking oats
1/2 cup packed brown sugar
1 tsp. salt
1/2 tsp. cinnamon
2 eggs, lightly beaten
1 cup skim milk
1/4 cup butter
1 peeled and diced tart apple
1/4 cup dried apricots, diced
1/4 cup golden raisins
1/4 cup chopped pecans
Directions
8x8 pan cut into 9 servings
Combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk, applesauce and butter; add to dry ingred. Stir in fruit (other fruits may be substituted such as, pears, peaches, blueberries)
Pour into 8x8 baking dish coated with butter and sprinkle nuts on top. Bake for 35-40 minutes at 350 F until a knife inserted in the center comes clean. Cut into squares and serve with extra skim milk if desired. Will keep in fridge for a week.
