    4 portabella mushrooms
    4 slices of good multi-grain bread
    1 medium onion, chopped
    2 stalks celery
    3 oz shredded asiago cheese
    5 oz extra firm tofu, mashed
    1/4 c walnuts, finely chopped


Brown the onion and celery in the olive oil. Dry the bread in the oven and crumble it into bread crumbs. Mix the mashed tofu, walnuts, 1/2 of the cheese and the vegetables together. Stuff the mushrooms with the stuffing, and top with the rest of the cheese.

Bake at 350 for 25-30 min or till brown and bubbly.
