    1 tbsp Olive Oil
    1 clove garlic (crushed)
    1 med onion (chopped)
    4 med carrots
    1 large potato
    2 cups chopped cabbage
    3 cups vegetable broth
    1 large can diced tomato
    I can chick pea (rinsed)


1) heat oil, in large soup pot, saute garlic and tofu (set aside tofu)
2) add chopped carrot, potato and cabbage - cook until soft
3) add tomato, broth, and chick peas
4) in food processor, puree
5) add salt and spices to taste
6) reheat and serve
