    4 oz. Lasagna Noodles
    1.5 ground turkey
    1 cup shredded carrots
    1 medium onion, chopped
    1 can diced tomatoes
    4 cups spaghetti sauce (reserving 1/4 cup)
    2 cups cottage cheese
    1 cup mozzarella cheese
    1 cup Colby cheese
    20 leaves of fresh spinach


Makes 12 servings

Brown turkey, add carrots, onion, and diced tomatoes. Continue cooking 5--7 minutes. Remove from heat and add spaghetti sauce (reserving 1/4 cup) and cottage cheese.

Cook lasagna noodles as directed. Spray 9 x 13 pan with non-stick cooking spray. Cover bottom of pan with 1/2 of the reserved spaghetti sauce. Place 3 lasagna noodles length wise, cover with 1/4 cup Colby cheese. Cover with 1/2 of turkey mixture, cover with layer of fresh spinach, leaves, and cover with 1/4 cup mozzarella cheese.

Repeat layers a second time. Ending with a layer of noodles on top, covered with the remaining spaghetti sauce and any remaining cheese.

Bake at 350 for 25--30 minutes, until cheese is bubbly.
