Ingredients

2 medium yellow onions, chopped
3 garlic cloves, minced
2 red bell peppers, seeded/choped
1-2 TBSP light brown sugar
1 tsp fresh minced ginger
1 tsp ground cumin
1-2 tsp ground cinnamon (more if you like)
1/2 tsp cayenne pepper
1/2 to 2/3 cup natural peanut butter
2-3 medium sweet potatoes, diced
1 can red kidney beans
1 can (15 ou) diced tomatoes
4 cups low sodium vegetable stock
salt to taste

Directions
sautee garlic/onions until softened
add peper and cook til softened
stir in brown sugar, ginger, cumin, cinnamon, pepper
stir in peanut butter
add potatoes, kidney beans (rinsed) and tomatoes - stir to coat
add vegetable stock and bring to boil
reduce heat and simmer until sweet potatoes are soft (about 30 min)
can top with chopped cilantro and/or peanuts if desired
