    3 lbs beef stew meat, 1" cubes
    1 tbs extra virgin olive oil
    1-2 large onions, sliced
    1/2 lb carrots, cut into 1" thick coins
    3 large potatoes, 1" cubes
    4 cloves garlic, minced
    Salt & pepper to taste (nutrition info w/out salt)
    2 tbs flour to coat meat
    garlic & onion powder, dash
    1 qt beef stock, or no sodium boullion prepared to 1 qt.
    1/4 cup Ketchup


Sprinkle beef cubes with pepper, garlic & onion powders, flour.

Make sure crock pot doesn't boil or meat will toughen and veggies will become soggy.

Brown floured beef cubes in olive oil & transfer to crock pot. Add all veggies and broth, set to 170*-190* F and cook 5-8 hours (until veggies are tender).

If using a Dutch oven, add veggies during the last 35 minutes of cooking & simmer until tender. Add a few tablespoons of flour at the same time to thicken the gravy if desired. Extra veggies can be added--turnips, corn, sweet potato, green beans, tomato. A pinch of thyme & basil & bay leaf are good additions.
