    Cooking Spray
    8 Roma or Plum Tomatoes, seeded and halved
    1 Small onion, peeled and chopped
    1 Jalapeno, seeded and quartered
    3 Cloves Garlic
    1/3 Cup Cilantro
    3 Tbs Lime Juice
    Black Pepper
    1.5 Cup Zucchini, chopped
    1 Cup Corn, canned ok
    1 Red Bell Pepper, chopped
    3 Chicken Breasts, cooked and shredded
    10oz Can of Green Enchilada Sauce
    4oz Can of Green Chile's, chopped
    1 Tbs Chile Powder
    1 Tbs Cumin
    12 Corn Tortillas
    1 Cup Shredded Cheddar
    1 Cup Shredded Monterey Jack Cheese


Spray baking sheet with cooking spray and place tomatoes, onion, jalapeno, and garlic on it. Place cookie sheet under broiler for 20 minutes, stirring occasionally. Veggies will look "charred" when done.

Place above mixture into food processor with cilantro, lime, and black pepper to taste. Puree till smooth. Set aside.

In skillet coated with cooking spray, sautee zucchini, corn, and red pepper for 5ish minutes. Add chicken and green chiles, sautee for 2 minutes more. Add green enchilada sauce, cumin, and chili powder, mix and heat through. Remove from heat.

Spray 9x13 baking dish with cooking spray. Spread 1/4 cup of salsa mixture on the bottom of baking dish. Place half of tortillas on top of mixture, spread evenly. Place 2 cups chicken mixture on top of tortillas. Place 3/4 cup salsa on top of chicken mixture, top with 1/2 cup of each cheese. Repeat layers, ending with cheese.

Bake in oven at 350 for 25 minutes or until cheese is melted and bubbly. Serves 8.
