Ingredients

* *Brown Rice, long grain, 1 cup
* Milk, canned, evaporated, nonfat, .33 cup
* *Brown Rice, long grain, 6 cup
* *1 can/120 g clover leaf flaked light tuna in water, 2 serving
* frozen cut green beans (1serving = .5 cup), 1 cup
* frozen green peas (1 serving = .5 cup), 2 serving
* frozen whole kernel corn (1 serving = .5 cup), 2 serving
* Mushrooms, fresh, 2 cup, pieces or slices
* Olive Oil, 1 tbsp
* Salt, .5 tsp
* Pepper, black, .5 tsp
* Curry powder, 1 tsp
* Mozzarella Cheese, part skim milk, 50 grams
* *Onion, White, Fresh, .5 cup
* Garlic, 2 cloves
* Corn Starch, 10 grams
* Water, tap, 30 mL
Directions
Makes 8 1-cup servings
Cook the rice (I prepared it in a rice cooker while preparing the rest of the dish).
Fry the diced onion and garlic in olive oil with the salt and pepper till soft, add the mushrooms and cook till soft. Add the tuna and curry and fry just slightly.
Mix all ingredients in a casserole dish and bake for 20 minutes or so.
