Ingredients

    1/2 c. Cottage Cheese, Nonfat
    1/2 c. Blueberries, fresh
    3/4 c. rehydrated TVP
    1 T. Cinnamon, ground
    1/3 c. Splenda
    3 T. 100% Liquid Egg Whites

Directions

Mix all ingedients together and put in an oven safe baking dish that has been sprayed with non-stick spray. Bake at 425 degree for 25 minutes or until firm.

Any fresh fruit can be used for this recipe, I just happened to have blueberries on hand. The recipe I modified called for a diced fresh peach. Shirataki noodles which have been drained and patted dry can be used instead of TVP if you want to lower the protein.
