Introduction

Ingredients

1 yellow onion
1 tbs EVOO
1 tbs cumin
4 tsp chlli powder
1 Can Chick peas - 19oz
1 can black beans - 15.5oz
1 can corn - 15.25oz
1 can diced tomatoes - 14.5oz
1/2 can green chile peppers
1/2 cup water
Directions
Dice onion
Saute in pan for 3 minutes.
Add cumin & chilli powder, cook for 1 min.
Add tomatoes w/ juice, mix together.
Transfer to medium-large pot
Add chick peas, black beans, corn
Add 1/2 cup water
Cook on low to medium-low for 10minutes +, stirring occasionally. The longer you let it cook, the more delicious it will probably be.
Makes 4-6 servings depending on how large of a bowl you eat!
