Leftover turkey and stuffing make a delightful pot pie. Leftover turkey and stuffing make a delightful pot pie.

    8 oz cooked turkey
    200 grams carrots, chopped
    2 celery stalks, chopped
    4 cups chicken broth
    2 tbsp white flour
    Assorted seasoning - salt, pepper, thyme, and oregano
    1 cup stuffing


Put turkey, carrots, celery and seasoning into a crockpot. Whisk flour into chicken broth. Add to crockpot. Set on high for 4 hours, or low for 8 hours.

Heat oven to 350F. Put turkey mixture into oven safe bowls. Fill only 1/2 full. Take cooked stuffing and flatten until it is a pancake that will fit over the top of the oven safe bowl. Bake 15-20 minutes, until top of stuffing is crusted and browned.
