    1 cup zucchini
    1 cup crook neck squash
    1/2 cup carrots
    1 tbsp Extra Light Olive Oil


Slice & dice the vegetable. In a large pan, heat the oil and then add the carrots. When the carrots are beginning to soften, add the other vegetables. Cook until soft but still crisp.
