Number of Servings: 4

Ingredients

    Red, Green & Yellow Bell Peppers (half of each)
    Red Onion (half)
    Zuchinni (half medium squash)
    Garlic Cloves (2)
    EVOO (1/2 tbls)
    Italian Seasoning (1 tsp)
    Salt & Pepper to taste

Directions

Slice up half of each of the peppers.
Mince Garlic.
Slice hanf of zuchinni.

Mix in skillet with italian seasoning.
--I usually let it sit for half hour to an hor to let flavors soak in.

Once ready to eat, cover skillet and cook on low to medium heat for 3-4 minutes.
Now add 1/2 tbls of extra virgin olive oil and cook an additional 4 minutes or until veggies are tender.

Season with salt and pepper and indulge :)
