Introduction

Nothing earth-shattering here, but we'd eaten a very spicy Mexican meal and I wanted a quick little something sweet. This is for two people, half a tortilla each. That was all I wanted, but you could eat the whole tortilla and still not be too bad :) Nothing earth-shattering here, but we'd eaten a very spicy Mexican meal and I wanted a quick little something sweet. Ingredients

    Pam cooking spray (I recommend olive oil type)
    1 tbsp honey
    1 tsp ground cinnamon
    1 whole-wheat tortilla

Directions

1. Spray a skillet or griddle with a little cooking spray, just enough to cover it.

2. Heat the griddle on medium-high heat.

3. When oil is hot, place the tortilla on the griddle and leave it there until it begins to brown and crisp up, about 1.5 minutes. Flip the tortilla and repeat on the other side. The tortilla should be crispy and stiff when it's done.

4. Cut the tortilla into fourths with a pizza cutter. Drizzle honey over the quarters and sprinkle cinnamon over the honey. Enjoy while it's still hot!

Serves 2 (1/2 tortilla each)
