    1 pound extra lean ground beef
    1 large onion, chopped
    3 garlic cloves, minced
    1 pkg taco seasoning
    1 small can green chiles
    1-8 oz can tomato sauce
    1-14 oz can petite diced tomatoes
    1 cup nonfat plain Greek yogurt
    6-6 inch corn tortillas
    1 cup shredded 2% cheddar cheese


Spray skillet with Pam. Add onion and saute till translucent. Add beef and saute until fully cooked. Stir in taco seasoning, garlic and green chiles. Cook about 3 minutes. Add tomatoes and tomato sauce, cover and cook about 10 minutes till thickened. Remove from heat and stir in yogurt.

Spray an 8 inch baking dish with Pam. Over an open flame, blister each corn torilla. Lay three in bottom of dish, tearing to fit. Spoon half the meat mixture over top, then cover with 1/2 cup cheese. Repeat layers. Cover with non-stick foil & bake at 350 for 20 minutes; remove foil and bake another 10 minutes till cheese is bubbly and golden.
